This pound cake is tangy and moist thanks to fresh key limes and almond flour. No refined sugars or oils in this vegan, plant-based, and dairy-free dessert!
ingredients
- 2 cups almond flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup non-dairy milk
- 1/2 cup maple syrup
- 1/3 cup freshly squeezed key lime juice
- 1 tbsp key lime zest
- 1 tsp vanilla extract
- 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)

Preheat oven to 350°F. Grease a 9x5 inch loaf pan and set aside.

In a medium bowl, whisk almond flour, baking powder, baking soda, and salt together.

In a large bowl, whisk non-dairy milk, maple syrup, key lime juice, key lime zest, vanilla extract, and flax egg together.

Add dry ingredients to wet ingredients and stir until just combined.

Pour batter into prepared pan and bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean.
