Melty Mozzarella: A Plant-Based Cheese Alternative

- 1 cup raw cashews, soaked overnight
- 1/4 cup tapioca starch
- 1/4 cup nutritional yeast
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp sea salt
- 1 1/2 cups water
- 1/4 cup refined coconut oil

Drain and rinse cashews. Add to a blender with tapioca starch, nutritional yeast, lemon juice, garlic powder, onion powder, sea salt, and water. Blend until smooth.

Pour mixture into a saucepan and cook over medium heat, stirring constantly, until it thickens and pulls away from the sides of the pan.

Remove from heat and stir in coconut oil. Continue stirring until completely melted and smooth.

Pour mixture into a greased container and smooth out the top. Place in the fridge for at least 2 hours, until set.

Once fully set, scoop mixture into a microwave-safe bowl and heat in 30-second increments, stirring after each, until fully melted and stretchy.
