Slow Cooker Tangy Pineapple Pork
ingredients
- 1 pound pork tenderloin, sliced into thin strips
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup fresh pineapple chunks
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Cooked jasmine rice, for serving

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the pork strips and season with salt and pepper; sauté until golden brown, about 5-7 minutes.

Transfer the browned pork to the slow cooker. Add the garlic, onion, red and yellow bell peppers, and fresh pineapple.

In a bowl, mix together the ketchup, rice vinegar, brown sugar, and soy sauce; pour the sauce over the pork and vegetables in the slow cooker.

Cover and cook on low for 6-8 hours or high for 3-4 hours until the pork is tender and flavors are melded.

About 30 minutes before serving, stir in the cornstarch mixture to thicken the sauce.

Serve hot over steamed jasmine rice and enjoy!
