Savory Spiced Beef Vindaloo
ingredients
- 5.5 lbs beef stew meat, cubed
- 3 tbsp tamarind paste
- 3 tbsp vegetable oil
- 1 large onion, chopped
- 6 cloves garlic, minced
- 1 1/2-inch piece ginger, grated
- 3 tomatoes, chopped
- 1 1/2 tbsp paprika
- 3 tsp cumin
- 1 1/2 tsp turmeric
- 1 1/2 tsp coriander
- 1 1/2 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish

Marinate beef with tamarind paste, salt, and pepper.

Heat oil in a pan, sauté onions, garlic, and ginger until fragrant.

Add beef, brown on all sides.

Add water, cover, simmer for 1.5 hours, until beef is tender.
