Tapioca Delight Khichdi

Experience a burst of flavors with this comforting and nutritious tapioca seed khichdi, packed with vegetables and aromatic spices.

- 1 cup tapioca seeds
- 1 cup mixed vegetables (carrots, peas, beans, corn)
- 1 onion, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ghee
- 1 teaspoon cumin seeds
- 1 teaspoon ginger-garlic paste
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh cilantro leaves for garnish

Rinse the tapioca seeds and soak them in water for 2 hours.

Heat ghee in a pressure cooker and add cumin seeds. Sauté until they crackle.

Add chopped onions and sauté until golden brown.
- 4.
Stir in ginger-garlic paste and cook for a minute.
- 5.
Add tomato puree, turmeric powder, red chili powder, garam masala, and salt. Cook until the masala starts releasing oil.

Drain the soaked tapioca seeds and add them to the cooker along with mixed vegetables.
- 7.
Add 3 cups of water and mix well. Close the pressure cooker and cook for 3 whistles on medium heat.
- 8.
Once the pressure is released, open the cooker and garnish with fresh cilantro leaves.
- 9.
Serve hot, and enjoy this wholesome tapioca seed khichdi.
