Thai Chili Fusion Sauce

- 10 red chili peppers
- 3 cloves of garlic
- 1 thumb-sized ginger
- 1 lime
- 2 tablespoons gluten-free soy sauce
- 2 teaspoons rice vinegar
- 1 teaspoon fish sauce (optional)
- 1 teaspoon sesame oil
- 1/4 cup water
- 1/2 teaspoon xanthan gum (for thickening)

Slice the chili peppers and remove the seeds for a milder sauce.

Peel and roughly chop the garlic and ginger.

Zest and juice the lime.

In a blender, combine chili peppers, garlic, ginger, lime zest, lime juice, soy sauce, rice vinegar, fish sauce (if using), sesame oil, and water. Blend until smooth.

Transfer the mixture to a small saucepan and bring it to a simmer over medium heat.

Sprinkle xanthan gum evenly over the sauce while whisking continuously to avoid clumps. Cook for an additional 2 minutes, until thickened.
