ingredients
- 1 cup glutinous rice
- 1 ¼ cups coconut milk
- ½ cup sugar
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- 1 ripe mango, sliced (optional)
- Toasted sesame seeds or mung beans for garnish (optional)
steps
- 1.
Rinse the glutinous rice under cold water until the water runs clear, soaking it in water for at least 4 hours or overnight.
- 2.
Drain the rice and place it in a bamboo steamer lined with cheesecloth or a heatproof dish.
- 3.
Fill a pot with water and bring it to a simmer. Place the steamer or dish over the pot, cover, and steam the rice for about 25-30 minutes until tender.
- 4.
While the rice is cooking, combine the coconut milk, sugar, salt, and vanilla extract in a saucepan over low heat, stirring until sugar dissolves. Do not boil.
- 5.
Once the rice is cooked, transfer it to a bowl and pour half of the coconut mixture over the rice. Mix gently and let it soak for 15 minutes.
- 6.
To serve, spoon the sticky rice into bowls, drizzle with the remaining coconut sauce, and top with fresh mango slices and optional garnishes. Enjoy!
