A tangy, mildly spiced tomato and chickpea curry recipe that can easily be made in under an hour. ingredients
- 2 cans chickpeas, drained and rinsed
- 2 cans diced tomatoes
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tbsp ground cumin
- 1 tbsp paprika
- 1 tsp salt
- 1 tsp ground ginger
- 1/4 tsp cayenne pepper
- 2 tbsp vegetable oil
- 1/2 cup vegetable broth
- Fresh cilantro, chopped

In a large saucepan, heat the oil over medium heat. Add the onions and garlic, sautéing for about 2-3 minutes until soft.

Add the curry powder, cumin, paprika, salt, ginger, and cayenne pepper. Stir, cooking for an additional minute.

Add the diced tomatoes, chickpeas, and vegetable broth. Stir and let the curry mixture simmer for about 20-25 minutes over low heat.
