Fresh Tomato Basil Bruschetta
ingredients
- 3 ripe tomatoes, diced
- 1 small red onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons extra virgin olive oil
- Handful of fresh basil leaves, thinly sliced
- Salt and pepper to taste
- 1 whole wheat baguette, sliced and toasted

In a bowl, combine the diced tomatoes, chopped red onion, minced garlic, and thinly sliced basil.

Drizzle the extra virgin olive oil over the mixture and toss gently to coat all the ingredients.

Season with salt and pepper to taste and let the flavors meld for at least 15 minutes.

Toast the whole wheat baguette slices until golden and crisp.

Spoon the tomato basil mixture onto the toasted baguette slices.

Garnish with a few additional basil leaves, if desired.
