- 1.5 lbs (680g) boneless pork loin
- 2 large beets, cooked and sliced
- 2 jalapeños, seeds removed and diced
- 1 puff pastry sheet
- 1 egg, beaten
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- Salt and pepper to taste
