Triple Chocolate Delight

- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
- 8 ounces dark chocolate, chopped
- 1 cup heavy cream
- ¼ cup powdered sugar
- 1 teaspoon instant coffee granules
- ¼ cup hot water
- Dark chocolate shavings (for garnish)

Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add milk, vegetable oil, eggs, and vanilla. Mix until smooth. Stir in boiling water.

Pour the batter evenly into the prepared pans and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool completely before assembling.
