ingredients
- 1 large watermelon
- 1 whole turkey (12-14 lbs)
- 1 whole chicken (4-5 lbs)
- 4 lemons
- 6 sprigs of fresh rosemary
- 8 cloves of garlic
- 6 tablespoons olive oil
- 1 tablespoon smoked paprika
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried sage
- Butcher's twine for trussing
steps
- 1.
Preheat the oven to 350°F (175°C) and line a roasting pan with aluminum foil.
- 2.
Rinse the turkey and chicken under cold water, then pat them dry with a paper towel.
- 3.
In a small bowl, combine the smoked paprika, salt, black pepper, dried thyme, and dried sage to make the poultry seasoning.
- 4.
Generously rub the poultry seasoning all over the turkey and chicken, ensuring they are well coated.
- 5.
Cut the lemons into halves and squeeze the juice over the turkey and chicken. Place the squeezed lemon halves inside the cavities of both birds.
- 6.
Stuff the chicken into the watermelon, leaving some space at the top to close it. Use toothpicks or skewers to secure the watermelon shut.
- 7.
Place the watermelon-stuffed chicken inside the cavity of the turkey. Truss the turkey to secure the chicken inside, using butcher's twine.
- 8.
Crush the garlic cloves and place them, along with the rosemary sprigs, inside the turkey cavity.
- 9.
Carefully place the turkey on the prepared roasting pan.
- 10.
Drizzle the olive oil over the turkey and cover it loosely with aluminum foil.
- 11.
Roast the poultry in the preheated oven for 3 to 3.5 hours, or until the turkey reaches an internal temperature of 165°F (75°C) and the chicken is fully cooked. Remove the foil during the last 30 minutes to allow the skin to crisp up.
- 12.
Once cooked, let the poultry rest for 30 minutes before removing the watermelon-stuffed chicken from the turkey.
- 13.
Slice and serve the turkey with the watermelon-stuffed chicken as an extraordinary centerpiece dish!
