ingredients
- 1.5 lbs chicken breast, boneless and skinless
- 1 cup coconut milk
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 1 teaspoon ginger, grated
- Fresh cilantro, for garnish
- Salt and pepper, to taste
steps
- 1.
In a large skillet, heat the vegetable oil over medium heat.
- 2.
Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown on both sides, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
- 3.
In the same skillet, add the onion, red bell pepper, and garlic. Sauté until the onion becomes translucent and the peppers are slightly softened.
- 4.
Return the chicken to the skillet and add coconut milk, pineapple chunks (with some juice), soy sauce, lime juice, brown sugar, and grated ginger. Stir well to combine.
- 5.
Reduce the heat to low, cover the skillet, and simmer for 15-20 minutes, or until the chicken is cooked through and the flavors have melded together.
- 6.
Serve the tropical coconut chicken over rice or noodles, garnished with fresh cilantro.
