Tropical Paradise Cream Puffs

- 1 cup all-purpose flour
- ½ cup unsalted butter
- 1 cup water
- 4 large eggs
- 1 cup coconut milk
- ½ cup granulated sugar
- ¼ cup cornstarch
- ½ teaspoon vanilla extract
- ¼ teaspoon coconut extract
- ½ cup cherry jam

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a saucepan, combine water and butter. Heat over medium heat until the butter melts and the mixture comes to a boil. Remove from heat.

Stir in flour until the mixture forms a ball of dough. Let it cool for a couple of minutes.

One at a time, add eggs to the dough, beating well after each addition until the mixture is smooth and glossy.

Drop tablespoonfuls of the dough onto the prepared baking sheet, leaving space between each for expansion. Bake for 25-30 minutes, or until golden brown. Remove from oven and let them cool completely.

In another saucepan, whisk together coconut milk, granulated sugar, cornstarch, vanilla extract, and coconut extract. Cook over medium-high heat, stirring constantly until the mixture thickens into a smooth custard.

Remove from heat and let the coconut custard cool to room temperature.

Once the custard has cooled, cut the top third off the cream puffs. Fill the bottom part with a generous spoonful of coconut custard and replace the top.
