Succulent yellowfin sole paired with sweet bananas, crispy potatoes, and a variety of colorful vegetables - a flavor explosion in every bite.
ingredients
- 1 lb yellowfin sole fillets
- 2 ripe bananas
- 4 medium potatoes
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 small onion
- 2 cloves garlic
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 tsp paprika
- 1/2 tsp cumin
steps

Preheat oven to 400°F.
- 2.
Slice bananas, potatoes, bell peppers, zucchini, onion, and garlic.
- 3.
Season sole fillets with salt, pepper, paprika, and cumin.
- 4.
Heat olive oil in a large skillet.
- 5.
Sear sole fillets for 2 minutes on each side. Remove and set aside.
- 6.
In the same skillet, sauté garlic and onions.
- 7.
Add potatoes, bell peppers, and zucchini. Cook until tender.
- 8.
Add sliced bananas and cook for a few minutes.
- 9.
Transfer vegetables to a baking dish, top with sole fillets, and bake for 10 minutes.

Serve hot and enjoy the tropical flavors!
