Turkey and Cheese Stuffed Shells

Juicy ground turkey mixed with flavorful spaghetti sauce, stuffed into pasta shells, topped with melty cheese and roasted bell peppers - a delicious twist on a classic Italian dish!

- 1 pound ground turkey
- 24 jumbo pasta shells
- 2 cups shredded mozzarella cheese
- 1 ½ cups spaghetti sauce
- 1 bell pepper, roasted and diced
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Fresh basil leaves, for garnish (optional)

Preheat the oven to 375°F (190°C).

Cook the pasta shells according to package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.

Add ground turkey, dried basil, dried oregano, salt, and black pepper to the skillet. Cook until the turkey is browned and cooked through. Remove from heat and let it cool slightly.

In a mixing bowl, combine the cooked turkey mixture, roasted bell peppers, and 1 cup of shredded mozzarella cheese.

Spread half of the spaghetti sauce in the bottom of a 9x13-inch baking dish.

Stuff each pasta shell generously with the turkey and cheese mixture, and arrange them in a single layer on top of the sauce in the baking dish.

Pour the remaining spaghetti sauce over the stuffed shells, and sprinkle with the remaining shredded mozzarella and grated Parmesan cheese.

Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired.
