Turmeric Lemon Chicken with Cauliflower Puree

Tender chicken breast flavored with turmeric and zesty lemon pairs perfectly with velvety cauliflower puree in this healthy low-carb dish.

- 4 chicken breasts, pounded to even thickness
- 1 lemon, juiced and zested
- 1 tsp turmeric
- 1 tsp garlic powder
- Salt and pepper
- 1 head cauliflower, chopped
- 2 tbsp butter
- ¼ cup unsweetened almond milk
- 1 tbsp olive oil
- Fresh parsley for garnish

Preheat oven to 375°F. In a small bowl, combine lemon juice, zest, turmeric, garlic powder, salt and pepper to form a paste. Rub mixture onto chicken breasts.

In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and cook 2-3 minutes until browned. Flip and transfer skillet to oven. Cook for an additional 10-15 minutes until chicken reaches an internal temperature of 165°F.

In a separate pot, steam cauliflower until tender. In a blender, puree cauliflower with butter, almond milk, salt and pepper until smooth and creamy.
