ingredients
- 2 cans coconut milk
- 1/2 cup cane sugar
- 1/4 cup cocoa powder
- 1/4 cup almond butter
- 1/4 cup vegan fudge sauce
- 1/2 cup roasted almonds, roughly chopped
steps
- 1.
In a saucepan over medium heat, combine coconut milk, cane sugar, and cocoa powder. Whisk until well mixed and simmer for 5 minutes.
- 2.
Remove from heat and let the mixture cool for 10 minutes. Then, pour into an ice cream maker and churn according to the manufacturer's instructions.
- 3.
While the ice cream is churning, prepare the almond clusters. In a small bowl, mix almond butter and fudge sauce until well combined.
- 4.
Add chopped roasted almonds to the bowl and mix until fully coated.
- 5.
Once the ice cream has reached a soft-serve consistency, add spoonfuls of the almond clusters and fudge sauce in a swirling pattern. Gently fold them into the ice cream using a spatula.
- 6.
Transfer the ice cream to a freezer-safe container, creating more layers of fudge sauce and almond clusters. Drizzle some additional fudge sauce on top.
- 7.
Cover the container and freeze for at least 4 hours, or until firm and scoopable.
- 8.
Serve the Vegan Moose Tracks Ice Cream in bowls or cones, and enjoy!
