ingredients
- 2 cups apple cider
- 1 cup honey
- 1 cup light malt extract
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon allspice
- ½ teaspoon cloves
- ½ teaspoon yeast (such as champagne or ale yeast)
- 2 tablespoons water (for the yeast)
- 1 cup diced fresh apples (Granny Smith or Honeycrisp)
- Optional: Whole cinnamon sticks and apple slices for garnish
steps
- 1.
In a small saucepan, heat the apple cider over medium heat until just simmering. Do not boil.
- 2.
Stir in the honey and malt extract until fully dissolved, then remove from heat.
- 3.
In another bowl, dissolve the yeast in warm water (about 100°F) and let it sit for 5-10 minutes until frothy.
- 4.
Mix the yeast into the warm cider mixture, then add in the cinnamon, nutmeg, allspice, and cloves.
- 5.
Allow the mixture to cool to room temperature, then pour it into a fermentation vessel or large pitcher.
- 6.
Add the diced apples, stirring gently to combine.
- 7.
Cover with a clean cloth and let it ferment in a cool, dark place for 3-7 days, tasting periodically to achieve your desired sweetness and flavor.
- 8.
Once fermentation is complete, bottle the braggot, straining out the apple pieces if desired.
- 9.
Chill in the refrigerator, then serve warm with optional garnishes like cinnamon sticks and apple slices.
