Hearty Black Bean Comfort
ingredients
- 2 cups cooked black beans (low sodium or no salt added)
- 1 medium onion, diced
- 2 garlic cloves, minced
- 4 cups water
- 1 teaspoon ground cumin
- 1 tablespoon lime juice
- ½ cup fresh cilantro, chopped
- Black pepper, to taste
- Optional: Avocado slices and extra cilantro for garnish

In a large pot, heat a drizzle of olive oil over medium heat.

Add the diced onion and sauté for about 5 minutes until translucent.

Stir in the minced garlic and ground cumin; cook for an additional minute.

Pour in the water and bring to a boil.

Add the cooked black beans, then reduce heat and simmer for 15 minutes.

Stir in lime juice and season with black pepper to taste.
