- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 bell pepper, diced (red or yellow)
- 1 can (14 oz) diced tomatoes
- 1 tsp zaatar spice mix
- 1/2 tsp cumin
- Salt and pepper to taste
- 4 large eggs
- 1 cup crumbled feta cheese
- Fresh parsley, chopped (for garnish)
