A rich coconut-based chicken soup with zesty flavors and colorful vegetables, now with added uncooked noodles for a satisfying twist.
ingredients
- 2 gallons homemade vegetable broth
- 2 lb frozen chicken breast
- 2 cups corn kernels
- 2 onions, chopped
- 6 celery stalks, diced
- 6 garlic cloves, minced
- 4 carrots, sliced
- 4 tomatoes, diced
- 2 jalapeños, seeded and diced
- 2 limes, juiced
- 2 bell peppers, chopped
- 1 can coconut cream
- 1 lb uncooked noodles (e.g. egg noodles)

In a large pot, bring vegetable broth to a boil. Add chicken and simmer for 20 minutes, then shred chicken.

Add corn, onion, celery, garlic, carrots, tomatoes, jalapeños, bell peppers, coconut cream, and uncooked noodles. Simmer for another 10-15 minutes until noodles are cooked.

Stir in lime juice and season with salt and pepper to taste. Serve hot and enjoy!
