Tender chicken thighs marinated in zesty lemon, garlic, and avocado oil, served with fragrant cumin-spiced basmati rice, roasted red onions, and oregano. A burst of Mediterranean flavors in every bite!
ingredients
- 4 bone-in, skin-on chicken thighs
- 2 cloves of garlic, minced
- 1 lemon, juiced and zested
- 2 tablespoons avocado oil
- 1 red onion, sliced
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 cup basmati rice

Preheat oven to 400°F.

In a bowl, combine garlic, lemon juice, zest, and avocado oil. Marinate chicken thighs for 30 minutes.

Roast red onions in the oven for 20 minutes.

Season chicken with cumin, oregano, salt, and pepper. Place on a baking sheet with onions and bake for 25 minutes.

Cook basmati rice according to package instructions.
