ingredients
- 1 (4-5 lb) whole chicken, cleaned and patted dry
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/2 cup olive oil
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- Zest of 1 lemon
- Salt and pepper, to taste
- Lemon wedges and fresh herbs for garnish (optional)
steps
- 1.
Preheat your oven to 425°F (220°C).
- 2.
In a bowl, whisk together lemon juice, olive oil, minced garlic, rosemary, thyme, parsley, lemon zest, salt, and pepper to create the marinade.
- 3.
Place the chicken in a large resealable bag or deep dish and pour the marinade over it. Seal or cover, and refrigerate for at least 2 hours or up to overnight for fuller flavor.
- 4.
Remove the chicken from the marinade, allowing excess marinade to drip off, and reserve the remaining marinade.
- 5.
Place the chicken breast-side up on a roasting pan and tuck the wing tips under the body.
- 6.
Brush the chicken with the reserved marinade and season with additional salt and pepper.
- 7.
Roast in the preheated oven for 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden and crisp.
- 8.
Let the chicken rest for 15 minutes before carving. Serve with lemon wedges and additional fresh herbs, if desired.
