Zesty Lemon Herb Roasted Chicken

- 1 whole chicken (about 4 lbs)
- 2 lemons
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme leaves
- 4 garlic cloves, minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 onion, quartered

Preheat your oven to 400°F (200°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, combine the chopped rosemary, thyme, minced garlic, olive oil, salt, black pepper, and paprika.

Cut one of the lemons in half and squeeze its juice into the herb mixture, then slice the other lemon into thin slices.

Gently lift the skin of the chicken and spread a generous amount of the herb mixture underneath, distributing it as evenly as possible. Rub any remaining mixture over the top of the chicken.

Stuff the quartered onion and lemon slices inside the chicken cavity.

Transfer the chicken to a roasting pan and place it in the preheated oven.

Roast for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Baste the chicken with its juices every 20 minutes or so to ensure it stays moist and flavorful.

Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving.
