Tangy Lemon Cookie Bars

- 1 ½ cups crushed lemon-flavored sandwich cookies
- ¼ cup unsalted butter, melted
- 1 cup unsweetened coconut milk
- ¼ cup fresh lemon juice
- Zest of 2 lemons
- 2 tablespoons arrowroot powder
- 1 teaspoon lemon extract

Preheat the oven to 350°F (175°C) and grease a square baking dish.

In a mixing bowl, combine the crushed lemon-flavored sandwich cookies and melted butter. Press the mixture firmly into the bottom of the prepared baking dish to form the crust.

In another bowl, whisk together the unsweetened coconut milk, fresh lemon juice, lemon zest, arrowroot powder, and lemon extract until smooth.

Pour the lemon mixture over the cookie crust, spreading it evenly.

Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden.

Allow the bars to cool completely in the baking dish before refrigerating for at least 2 hours to set.
