Moist Zesty Quinoa Oatmeal Chia Cookies

- 240g spelt flour
- 200g sugar
- 180g rolled oats
- 115g butter, softened
- 2 eggs
- 90g quinoa flakes
- 30g linseed meal
- 15g brewers yeast (2%)
- 10g chia seeds (1.5%)
- 10g baking powder
- 2.5g orange oil (0.5%)
- 60ml water

Preheat the oven to 350°F (175°C).

In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.

Add the eggs one at a time, beating well after each addition.

In a separate bowl, combine the spelt flour, oats, quinoa flakes, linseed meal, brewers yeast, chia seeds, and baking powder.

Gradually add the dry ingredients to the butter mixture and mix until well incorporated.

Stir in the orange oil and water, ensuring they are evenly distributed throughout the dough.

Using a tablespoon or cookie scoop, drop rounded portions of dough onto a parchment-lined baking sheet. Flatten each portion slightly with the back of a spoon.

Bake for 12-15 minutes or until the edges turn golden brown.
