- 1 tablespoon taco seasoning
- 1/4 cup shredded cheese
- 2 tablespoons sour cream
- 1 tablespoon mayonnaise
- 1 tablespoon tomato paste
- 1/2 cup corn (canned or frozen)
- 1 tortilla shell (or taco shell)
- 1 cup leftover cilantro rice
- Fresh cilantro for garnish
