Zesty Vegan Jalapeño Poppers

- 12 large jalapeño peppers
- 1 cup raw cashews, soaked for 4 hours
- 2 tablespoons nutritional yeast
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ¼ teaspoon salt
- ½ cup breadcrumbs (preferably panko)
- 1 tablespoon olive oil
- Fresh cilantro for garnish (optional)

Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.

Cut the jalapeño peppers in half lengthwise and remove the seeds. Set aside.

In a blender or food processor, combine soaked cashews, nutritional yeast, minced garlic, lemon juice, smoked paprika, onion powder, and salt. Blend until smooth and creamy.

Spoon the cashew mixture into each jalapeño half, filling generously.

In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the mixture over the filled jalapeños.

Place the jalapeño poppers on the prepared tray and bake for 20-25 minutes or until the tops are golden and crispy.

Remove from the oven and let cool slightly before garnishing with fresh cilantro. Serve warm.
