ingredients
- 4 lbs zucchini, shredded
- 3 campden tablets, crushed
- 2 oranges, zested and juiced
- 2 lemons, zested and juiced
- 7 cups sugar
- Yeast nutrients (as per package instructions)
- 1 packet wine yeast
- Water (enough to make 1 gallon)
steps
- 1.
Begin by washing the zucchini thoroughly and shredding it using a grater or food processor.
- 2.
In a large primary fermentation vessel, combine the shredded zucchini and water, ensuring the zucchini is fully submerged.
- 3.
Stir in the crushed campden tablets; cover and let sit for 24 hours to kill any wild yeasts.
- 4.
After 24 hours, add the orange and lemon juice along with their zest to the mixture.
- 5.
Gradually stir in the sugar until completely dissolved.
- 6.
Add the yeast nutrients as per instructions, then sprinkle the wine yeast on top without stirring.
- 7.
Cover the vessel with a clean cloth to allow fermentation while keeping out contaminants.
- 8.
Allow the mixture to ferment at room temperature for about 5 to 7 days, stirring daily.
- 9.
Once fermentation slows, siphon the liquid into a sanitized glass carboy, leaving sediment behind.
- 10.
Seal with an airlock and let mature for about 4 to 6 weeks.
- 11.
Once fermentation is complete, bottle the wine, corking it securely, and let age for another month before enjoying!
