Spiced Apple Protein Muffins
ingredients
- 1 1/2 cups cassava flour
- 1/2 cup protein powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 large eggs
- 1/2 cup honey
- 1/3 cup coconut oil, melted
- 1/2 cup Greek yogurt
- 1 tsp vanilla extract
- 1 1/2 cups diced apples

Preheat oven to 350°F and line muffin tin with liners.

In a bowl, mix cassava flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.

In another bowl, whisk eggs, honey, coconut oil, yogurt, and vanilla.

Gradually mix dry ingredients into wet, then fold in apples.
- 5.
Fill muffin cups 3/4 full and bake for 20-22 minutes.
