- 2 lbs chicken thighs, bone-in and skinless
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 tsp turmeric
- ½ tsp cayenne pepper (optional)
- 1 cup chicken broth
- 1 cup green olives, pitted and halved
- 2 preserved lemons, rinsed and sliced
- ¼ cup fresh cilantro, chopped
- Salt and pepper, to taste
- 2 cups couscous
- 2 ½ cups water or broth for couscous
