- 2 lbs chicken thighs, boneless and skinless
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 tsp ground coriander
- 1 tsp cinnamon
- 1 tsp paprika
- 1 tsp turmeric
- Salt and pepper to taste
- 2 cups vegetable broth
- 1 cup couscous
- 2 cups mixed vegetables (zucchini, bell peppers, carrots)
- 1 cup canned chickpeas, drained and rinsed
- 1/4 cup raisins or dried apricots
- Fresh cilantro, for garnish

In a large bowl, combine olive oil, cumin, coriander, cinnamon, paprika, turmeric, salt, and pepper.

Add chicken thighs to the bowl, ensuring they are well coated in the spice mixture.

In a large skillet over medium heat, sear the chicken for 4-5 minutes on each side until browned. Remove and set aside.
