Savory Saffron Chicken Tagine

Tender chicken cooked with saffron, olives, and preserved lemon in a rich, aromatic sauce. Perfect for breaking fast in Ramadan.
ingredients
- 2 lbs chicken thighs
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 pinch saffron threads
- 1/2 cup green olives
- 1 preserved lemon, sliced
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- 2 tbsp olive oil
steps
- 1.
Heat olive oil in a large pot. Add onions and garlic, sauté until soft.

Add chicken, ginger, cumin, coriander, saffron, salt, and pepper. Brown chicken on all sides.

Add olives, preserved lemon, and enough water to cover the chicken. Cover and simmer for 45 minutes.
- 4.
Uncover and simmer until sauce thickens. Add cilantro before serving.
