Vanilla Bean Chamomile Mead

Brew a captivating blend of flavors with this Vanilla Bean Chamomile Mead. - 3 lbs. Honey
- 1 gal Filtered or non-chlorinated water
- ½ cup Chamomile flowers
- ½ cup Chopped raisins
- 1 Vanilla bean, split
- ½ packet Yeast (champagne, wine, or mead yeast) or 1-2 pinches of bread yeast

In a large pot, combine honey and filtered water, stirring gently over low heat until the honey dissolves completely.

Remove from heat and allow the mixture (must) to cool to room temperature.

Once cooled, add the chamomile flowers and chopped raisins to the must. Let steep for about 30 minutes.

Strain the mixture to remove the chamomile flowers and raisins, pouring the liquid into a sanitized fermentation vessel.
- 5.
Split and scrape the seeds from the vanilla bean and add both the seeds and the pod to the must.

Sprinkle in your chosen yeast, gently stirring to incorporate, and seal the fermentation vessel.

Place the vessel in a cool, dark area to ferment for 4-6 weeks, or until bubbling slows significantly.
- 8.
Once fermentation is complete, carefully siphon the mead into sanitized bottles, leaving sediment behind.
- 9.
Allow bottles to age for at least 2-3 months before enjoying for a more refined flavor.
