A refreshing pasta salad with a combination of angel hair pasta, fresh vegetables, and a medley of mushrooms and asparagus, all tossed in a light and zesty dressing.
ingredients
- 8 oz angel hair pasta
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cucumber, diced
- 1 avocado, diced
- 8 oz mixed mushrooms, sliced
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 1/4 cup olive oil
- 2 cloves garlic, minced
- Juice of 1 lemon
- Salt and pepper, to taste
- Fresh basil, for garnish

Cook pasta according to package instructions. Drain and rinse under cold water. Set aside.

In a large skillet, heat olive oil over medium heat. Add garlic, mushrooms, and asparagus. Sauté until vegetables are tender.

In a large bowl, combine cooked pasta, sautéed vegetables, cherry tomatoes, zucchini, yellow squash, cucumber, and avocado.
