Autumn Pumpkin Spice Blondies

- 120 g coconut oil, melted
- 120 ml pure maple syrup
- 240 g canned pumpkin puree
- 2 large eggs
- 10 ml vanilla extract
- 180 g whole wheat flour
- 50 g rolled oats
- 5 g baking powder
- 5 g baking soda
- 5 g pumpkin pie spice
- 2.5 g salt
- 90 g dark chocolate chips (optional)
- 60 g chopped walnuts (optional)

Preheat your oven to 175°C and grease a 23x33 cm baking pan.

In a large bowl, whisk together the melted coconut oil and maple syrup until smooth.
