- 2 large Granny Smith apples, cored and thinly sliced
- 1 tablespoon butter
- 2 tablespoons brown sugar
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves

- Fresh thyme sprigs, for garnish
- 1 pound seasonal vegetables (e.g., Brussels sprouts, butternut squash, broccoli)
- Fresh rosemary sprigs, for garnish

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Season the duck breasts generously with salt and pepper on both sides.

In a large skillet over medium heat, melt the butter. Add the apple slices, brown sugar, and thyme leaves. Cook until the apples are tender and caramelized, about 6-8 minutes. Remove from heat and set aside.

Heat olive oil in another skillet over medium-high heat. Place the duck breasts skin side down and cook for 5 minutes until the skin turns crispy and golden. Flip the breasts and cook for another 3 minutes.
