ingredients
- 1/2 lb Crystal Malt 60L to 120L
- 1 oz Torrified Wheat - crushed or milled
- 1 lb Amber Dry Malt Extract (DME)
- 1 lb Light Dry Malt Extract (DME)
- 1/2 oz Hops (between 6% and 10% AA)
- 4 gallons Apple Juice or Cider (no preservatives)
- Enough Filtered, Spring, or Rain Water to make up 1 gallon
- 1/4 packet Nottingham Ale or Safale US-05 Ale Yeast
steps
- 1.
Begin by heating 2 gallons of water in a large brew kettle, bringing it to approximately 160°F (70°C).
- 2.
Add the Crystal Malt and Torrified Wheat to a muslin bag and steep in the heated water for 30 minutes.
- 3.
After steeping, remove the grain bag and let it drain into the kettle.
- 4.
Stir in the Amber and Light DME until fully dissolved.
- 5.
Bring the mixture to a boil, then add the hops, boiling for 60 minutes.
- 6.
After the boil, cool the wort quickly using an immersion chiller or an ice bath.
- 7.
Once cooled, transfer the wort to a sanitized fermentation vessel and add the 4 gallons of apple juice or cider.
- 8.
Add enough filtered water to reach the 5-gallon mark.
- 9.
Pitch the yeast into the mixture and seal the fermentation vessel with an airlock.
- 10.
Allow to ferment in a cool, dark location for 1-2 weeks, checking regularly.
- 11.
Once fermentation is complete, bottle your graff, allowing it to carbonate for an additional week.
- 12.
Chill, pour, and enjoy your homemade Autumn Orchard Ale!
