- 5 lbs fresh apples (Granny Smith or Honeycrisp)
- 2 cups granulated sugar
- 1 cup local honey
- 1 gallon spring water
- 1/4 teaspoon yeast nutrient
- 1/2 teaspoon pectic enzyme
- 1 packet wine yeast (like Champagne yeast)
- 1/2 teaspoon potassium metabisulfite (optional)

Wash, core, and chop the apples into small pieces.

In a large pot, mix the chopped apples, spring water, and granulated sugar. Heat gently to dissolve sugar without boiling.
