ingredients
- 1 ripe avocado, sliced
- 1 small onion, finely chopped
- 1 medium carrot, julienned
- 1 cup cooked rice
- 2 sheets of nori
- 1 teaspoon wasabi (to taste)
- 2 tablespoons tamari
steps
- 1.
In a skillet, sauté the chopped onion over medium heat until translucent, about 5 minutes.
- 2.
Add the julienned carrot to the skillet and cook for another 3-4 minutes until slightly softened.
- 3.
Prepare the cooked rice by seasoning it lightly with tamari for flavor.
- 4.
On a bamboo sushi mat, place a sheet of nori, shiny side down.
- 5.
Spread half of the seasoned rice evenly over the nori, leaving a small border at the top.
- 6.
Layer half of the sautéed onion and carrot mixture atop the rice, followed by sliced avocado.
- 7.
Add a small amount of wasabi along the center, adjusting to your spice preference.
- 8.
Carefully roll the sushi from the bottom up, using the mat to keep it tight. Seal the edge with a bit of water.
- 9.
Repeat with the second sheet of nori and remaining ingredients.
- 10.
Slice the rolls into bite-sized pieces and serve with extra tamari for dipping.
