A savory and satisfying breakfast casserole featuring crispy bacon, hearty potatoes, and flavorful veggies, all baked to perfection. Perfect for a crowd or meal prep!
ingredients
- 6 slices bacon, chopped
- 1 onion, diced
- 1 bell pepper, diced
- 2 cups diced potatoes
- 1 cup shredded cheddar cheese
- 6 slices bread, cubed
- 1 1/2 cups milk
- 6 tbsp butter, melted
- Salt and pepper to taste

Preheat oven to 375°F. Grease a 9x13-inch baking dish.

Cook bacon in a skillet until crispy, then remove and sauté onion, pepper, and potatoes in the bacon fat until tender.

In a bowl, mix bacon, veggies, cheese, and bread. Spread into the prepared dish.

In the same bowl, whisk together milk, butter, salt, and pepper. Pour over the mixture in the dish.
