ingredients
- 10 oz beef (tenderloin, strip loin, or flank steak), thinly sliced across the grain
- 1 tbsp low sodium soy sauce
- 1 tbsp freshly grated ginger
- 1 clove garlic, minced
- 1/2 tsp baking soda
- 10-12 oz snow peas, trimmed
- 1/4 cup water
- 1/3 cup beef broth, cold
- 2 tbsp oyster sauce
- 1 tsp cornstarch
- 3/4 tsp sugar
- 1/4-1/2 tsp red chili flakes
- Canola oil, as needed
- Scallions, thinly sliced, for garnish
- Sesame seeds, for garnish
steps
- 1.
Combine beef with ginger and minced garlic in a bowl.
- 2.
Mix soy sauce and baking soda in a small bowl. Pour over beef and mix well to coat evenly. Marinate in the refrigerator for 30-120 minutes, depending on the cut used.
- 3.
Whisk together beef broth and cornstarch in a separate bowl. Stir in oyster sauce, sugar, and chili flakes.
- 4.
Preheat the Barebones Long Handled Wok over high heat until smoking.
- 5.
Add a generous splash of oil to the wok and swirl to coat.
- 6.
Add marinated beef to the wok, separating the slices. Stir-fry for 2-3 minutes until just cooked through and starting to brown. Remove to a clean bowl and cover.
- 7.
Add 1/4 cup water and snow peas to the wok. Cook uncovered for 4-5 minutes, stirring occasionally, until most of the water has evaporated and the peas are slightly softened but still crisp.
- 8.
Pour the sauce into the wok with the snow peas. Cook for about a minute, stirring until the sauce thickens.
- 9.
Return the beef to the wok and stir to combine and warm through.
- 10.
Serve immediately, garnished with scallions and sesame seeds.
