Berry Basil Swirl Cheesecake

- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup fresh mixed berries (strawberries, blueberries, raspberries)
- 1/4 cup fresh basil leaves, chopped
- 1 cup heavy cream
- 1/4 cup powdered sugar

Preheat oven to 350°F. Mix graham cracker crumbs and melted butter, press onto bottom of 9-inch springform pan.

In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla.

In a blender, puree berries. Pour over cheesecake batter and swirl gently with a knife.

Bake for 50-55 minutes, or until center is almost set. Cool completely, then refrigerate for 4 hours.

In a chilled bowl, whip cream until soft peaks form. Add powdered sugar and chopped basil, continue whipping until stiff peaks form.
