Creamy and luscious chia pudding filled with sweet and tangy berries. It's a high-fibre breakfast or snack that tastes like dessert.
ingredients
- 1 cup unsweetened almond milk
- 1/4 cup chia seeds
- 1/2 tsp vanilla extract
- 1 tbsp honey or maple syrup
- 1/2 cup mixed berries (raspberries, blueberries, strawberries)
- 1/4 cup granola (optional)

In a small bowl, whisk together almond milk, chia seeds, vanilla extract, and sweetener until well combined.

Add half of the berries into the mixture and stir to combine.

Let the mixture sit for at least 10-15 minutes to let the chia seeds absorb the liquid, stirring occasionally.

Once the chia seeds have fully expanded, pour the mixture into two serving jars or bowls.

Top with the remaining berries and granola (if using).

Chill in the fridge for at least an hour or overnight.
