- 15 lbs honey
- 5 gallons clean, room temperature water
- 10 oz dry, instant bread yeast
- 5 lbs frozen mixed berries (blackberries, raspberries, blueberries)
- 2 vanilla beans
- 1 cinnamon stick
- 4 allspice berries

In a large sanitized fermentation vessel, dissolve 15 lbs of honey in 5 gallons of clean, room temperature water, stirring until fully combined.

Add the 10 oz of dry instant bread yeast to the honey-water mixture. Stir gently to incorporate.

Rinse the frozen mixed berries slightly under cold water to remove ice crystals, then add them to the fermentation vessel.

Split the vanilla beans lengthwise and scrape the seeds into the mixture, adding the pods as well for extra flavor.

Add the cinnamon stick and allspice berries to the fermentation vessel, giving it a light stir.

Cover the vessel with a sanitized lid or airlock, allowing for fermentation in a dark, cool area for 4 to 6 weeks.

After fermentation is complete, siphon the mead into sanitized bottles, leaving sediment behind.

Seal the bottles and store them in a cool, dark place. Allow the mead to age for at least 2 to 3 months before tasting.
