ingredients
- 4 cups raw honey
- 1 gallon water
- 2 whole nutmegs, cracked
- 3 cinnamon sticks
- 1 packet champagne yeast

In a large pot, heat water to just below boiling.

Stir in raw honey until dissolved.
- 3.
Add cracked nutmeg and cinnamon sticks.
- 4.
Let mixture cool to room temperature.
- 5.
Transfer to a sanitized carboy and add yeast.
- 6.
Seal with an airlock and let ferment for 2-3 weeks.
- 7.
Strain mead into bottles and age for 3 months.
- 8.
Serve chilled or gently warmed.
