Blackberry Wine

Craft your own exquisite blackberry wine using ripe blackberries and simple ingredients. This recipe balances sweetness with the natural tartness of blackberries, resulting in a rich and flavorful wine that's perfect for celebrations or quiet evenings at home. Allow time for fermentation to enhance the taste as it transforms into a delicious berry-infused spirit.
ingredients
- 6 lbs blackberries
- 2 ½ lbs granulated sugar
- 2 tsp pectic enzyme
- 7 pints water
- 4 tsp wine yeast
- 1 tsp yeast nutrient
steps
- 1.
Begin by thoroughly washing the blackberries to remove any dirt or impurities.
- 2.
In a large fermentation vessel, mash the blackberries to release their juice, leaving some pulp for texture.
- 3.
Dissolve the granulated sugar in warm water, and then add it to the mashed blackberries.
- 4.
Add 7 pints of water to the mixture, ensuring everything is well combined.
- 5.
Stir in the pectic enzyme, allowing it to break down the fruit pectin and enhance juice extraction.
- 6.
After resting for about 24 hours, sprinkle the wine yeast and yeast nutrient over the mixture, stirring gently to incorporate.
- 7.
Cover the vessel with a clean cloth and secure it with a rubber band. Allow it to ferment in a dark, warm place for about 1 to 2 weeks, stirring daily.
- 8.
Once fermentation slows, strain the mixture through a mesh bag or fine strainer to separate the liquid from the solids into a clean carboy.
- 9.
Once satisfied with the taste, bottle the wine and cork it securely. Allow it to mature for a few months before enjoying.
