ingredients
- 1 1/4 cups all-purpose flour
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and diced
- 1/4 cup ice water
- 2 cups fresh blueberries
- 1/4 cup granulated sugar
- 1 tbsp cornstarch
- 1 tbsp lemon juice
- 1 egg, beaten
- 1 tbsp turbinado sugar

Preheat oven to 400°F.

In a food processor, pulse flour and salt. Add butter, pulse until mixture resembles coarse crumbs. Add ice water until dough forms.

Roll dough into a circle, transfer to baking sheet.

In a bowl, mix blueberries, granulated sugar, cornstarch, and lemon juice. Spoon onto dough, leaving a border.

Fold edges of dough over filling. Brush edges with beaten egg, sprinkle turbinado sugar.

Bake for 30-35 minutes, until crust is golden and blueberries are bubbling.

Serve warm with a scoop of vanilla ice cream.
