British Sardine Pâté

This creamy and tangy pâté is the perfect appetizer or snack, made with fresh sardines, cream cheese, lemon zest and dijon mustard. Spread it on toast, crackers or eat it straight up for a burst of flavor.

- 1 lb fresh sardines, gutted and scaled
- 4 oz cream cheese, room temperature
- 1 tbsp dijon mustard
- 1 tbsp lemon zest
- 1 shallot, finely chopped
- 2 tbsp unsalted butter
- salt and pepper to taste

Preheat the oven to 400°F. Place sardines on a lined baking sheet and season with salt and pepper. Bake for 15-20 minutes or until cooked through. Remove from oven and let cool.

In a bowl, mix cream cheese, dijon mustard, lemon zest, and shallot until well combined.

Remove the skin and bones from the sardines and add them to the bowl with the cream cheese mixture. Mix until everything is well combined.

In a pan, melt butter over low heat. Pour melted butter into the cream cheese and sardine mixture and stir until well combined.

Transfer the pâté to a ramekin or other serving dish. Press plastic wrap onto the surface of the pâté to prevent a skin from forming. Chill in the refrigerator for at least an hour or until set.

Serve with crackers, toast or fresh vegetables.
